About Las Cruces
The city is the center of an agricultural region in the Mesilla Valley. The area is irrigated by the Rio Grande, which flows to the west of the city. To the east of the city are the Organ Mountains, flowing from the San Andrea and Franklin Mountains. Chili crop is a major production in Las Cruces and in honor of the crop, the official state question is “Red or Green?” in reference to the types of chili served at a city restaurant.

World Records and Attractions
Las Cruces hosts the annual Whole Enchilada Fiesta, which features the creation of a very large flat red enchilada.  The homemade masterpiece is cooked by a restaurant owner, Roberto Estrada. The average diameter of such an enchilada is about 10 feet, setting the Guinness World Record in 2004 for the world's largest flat enchilada. The festival also offer live music, carnival rides, food vendors, and a red chili pepper mascot named TWEFie. The city is also host to the Southern New Mexico State Fair, usually held a few days after the Whole Enchilada Fiesta. About 10 miles to the east are the Organ Mountains, among which is the Aguirre Springs National Recreation area where visitors can hike from a 4.5-mile trail from 5,600 feet to 6,880 feet on the Pine Tree Trail.  The trail covers a wide ecological range, which is especially stunning for arbor enthusiasts.

Education
New Mexico State University's main campus calls Las Cruces home. It is the only land grant university in the state and enrolls about 26,400 students on its main campus and four community colleges. The faculty-student ratio is 1 to 19 and the school has been ranked by the Institutional Research & Evaluation Inc. as one of America's 100 Best College Buys for 10 consecutive years. The raters praise the University for "the very highest quality education at the lowest cost." The University is one of 52 institutions in the nation to be designated as a NASA Space Grant College and only one of 12 to receive an excellent rating in that program.

Public schools in the city are operated by the Las Cruces Pubic School District. The school system runs 35 schools and enrolls about 24,000 students. The district's mission statement states that the LCPS is committed to providing a high-quality and world-class education focusing on literacy and numeracy. There are also four private grade schools in the city.
